Castelão: 27 year old vineyards.

SOIL

Quinta de D. Maria: Poor soils, mainly schist.

VINIFICATION

Harvest by hand. Gentle crushing and destemming, 24h cold skin maceration. Fermentation in stainless steal, at a controlled temperature of 23ºC. Ageing in used French oak barrels for 14 months. The wine is elegant and spicy, with low colour extraction.
