VINIFICATION
Harvest by hand. Gentle crushing and destemming, skin cold maceration for 48 hours before the start of the fermentation, which took place at a controlled temperature, in a typical 750L amphora, for 2 weeks, with skin contact. Aged in fine lees.

Harvest by hand. Gentle crushing and destemming, static decantation for 48h. Fermentations in inox and new French oak barrels at a controlled temperature with ageing on fine lees, resulting in wine with a citrus and mineral profile.
