Arinto: 31 year old vineyards.

SOIL

Herdade de Capela: Poor soils, mainly limestone.

VINIFICATION

Harvest by hand. Gentle destemming and crushing, skin cold maceration for 48h before the start of fermentation, which took place in 2 amphoras of 750L, at controlled temperature at 14º with pelicular maceration for 3 weeks. Aged in fine lees, resulting in a wine with a fresh and textured character supported with tension and acidity.
